Peanut Butter Cookies

A recipe my mother taught me.

“When my children were babies and husband was stationed overseas, I wanted to send him some cookies as a special treat but needed a recipe that would be quick and would travel well. My mother gave me this recipe and it was a huge success. These cookies are easy to make and taste absolutely delicious—even after traveling across the world!” ~Jennifer Beatty
Peanut Butter Cookies

Serves 4

  • 1 cup smooth peanut butter
  • 1 cup sugar
  • 1 egg
  • 20-25 large chocolate chips
  • small chocolate chips


Preheat oven to 350°

In a standard mixer, blend the peanut butter, sugar, small chocolate chips and egg until a dough forms.

On an un-greased cookie sheet, form 1 inch balls out of the dough. Space them about 2 inches apart on the cookie sheet.

Bake for 9-11 minutes

Press chocolate chips into each cookie immediately after taking the cookies out of the oven.

Eat them as quickly as possible!!

Cooking Notes

The chocolate chips are optional. Leave them out and enjoy traditional peanut butter cookies. You can also substitute M&Ms or another candy. Get creative! Baking times may vary depending on your oven. Be sure to check the cookies half way through to be sure that the bottoms don't burn.
